Unlock other cars:
Find 3 keys on each level and complete the race.
It does not matter what place can you finish.

Unlock fastest car:
Collect all keys on the second to last level "Tomb And Gloom" in the 
3rd Grand Prix. The 3rd and last key is hidden.
When looking for keys, change the cars views.
