Hardcore realistic mode option:
Go to the main menu, and press Up, Down, Left, Right, R1, Up, Down.

Reach 100 point rating on a track

Unlock beat the heat mode:
Go to the main menu, and press Up, Down, Left, Right, R1, Left, Right

Remove replay text:
Go to the main menu, and press Up, Down, Left, Right, R1, Down, Up. 
Start a replay, after press Circle.

View credits:
Go to the main menu, and press Up, Down, Left, Right, R1, Up, Up.

Unknown:
Go to the main menu, and press Up, Down, Left, Right, R1, Right, Left.

Shooting a paintballs:
Go to the "Race Day" screen. Press Up, Down, Left, Right, R1, Up, Up. 
To shoot a paintball press Up.

Race as Richard Petty:
Finish all Heat challenges at least a bronze rating
