Find all 6 stars in a level to get a doll.
Collect eight and sixteen dolls to unlock bonus levels.

Unlock songs in the music box option
Finish either bonus level

Play against previously defeated Bosses
Finish the fairground levels

Picture gallery option
Finish the fairground levels

Vision select option
Finish the game once and save. Start a new game, then push R1 to display 
the status screen. Select any stage by using the "Vision Selector" option.
