Finish the game in vs computer mode or story mode 

Get Zanza's Zanbato sword:
Go to the character selection screen, then hold Select
while selecting Zanza.

Unlock all movies and Saito Hajime as playable character:
Finish the game in hard mode to unlock Saito Hajime.
